Ginny’s Banana Chocolate Chip Muffins

I asked some of my favorite fellow ranch wives to share their best recipes with you! These women are teachers, X-ray technicians, dental hygienists, photographers and ranch hands – but the thing that brings us all together is that these women are wonderful ranch wives. They represent western cooking at its finest.

A good day of cooking starts with early morning breakfas. Pinterest is full of breakfast casseroles and most are pretty dang good, but Ginny’s Banana Chocolate Chip Muffins are a favorite around her house. Make a little bacon or sausage and you can probably get away with calling it a meal!  

  • sugar 1 cup
  • vegetable oil  cup
  • mashed bananas (brown bananas are best, 5 to 6 bananas) 2 cup
  • eggs 2 
  • flour 2 cup
  • chocolate chips 1.5 cup
  • baking soda 2 tsp.
  • cinnamon 1 tsp.
  • salt 2 tsp.
Per serving
Calories: 133 kcal
Proteins: 7 g
Fats: 23 g
Carbohydrates: 66 g

  • Preheat oven to 350 degrees.
  • Mix all ingredients together in a large bowl, then divide batter into a sprayed muffin pan.
  • Bake 20 minutes.

They’re moist, fluffy, rich in flavor, loaded with sweet chocolate chips, and they’re so delicious, I promise you’ll want to devour the whole thing, not just the tops.
